Shrimp & Veggies in a White Wine Sauce

Lately, I’ve been running into a serious mental cramp when I try to plan out dinners. Garett and I have pretty different tastes, so sometimes thinking of something that we might both like, is relatively healthy, and super tasty, makes my brain hurt. Especially a whole week of said meals. And ones that don’t take forever to make, because, let’s be honest, who has 4 hours to cook dinner?! Pinterest is fabulous for helping find delicious dinners, but sometimes, they just aren’t quite what I was looking for, or not exactly what I have in the fridge, or maybe includes one or two ingredients that Garett or I are not found of. But, sometimes, they are the perfect start to planning a delicious dinner. I found this particular recipe basically right after Garett admitted he liked shrimp (new knowledge for this wife, and a great start in the right direction towards my goal of getting him to like seafood.) So, I glanced through it, and what I had in the fridge, and decide it was just the right start.  Not exactly the perfect recipe, because, after all, it did include tomatoes (will ruin any good recipe) but it had shrimp and fresh basil… so it couldn’t be that bad.

I did have some tasty jalapeños, which I used instead of the red pepper flakes. Loved the spice that it added to the sauce. I also thought that some veggies with the garlic shrimp was a good plan, so I used a few that I had on hand.

The recipe suggested serving with orzo, which I’m sure would be tasty, but I didn’t have on hand. Besides Garett loves himself some linguini (or to be more accurate spaghetti, but, eh, its close enough)

The husband said: Delicious. Super flavorful dish that was still pretty light, and had some great veggies with it. I think I may try it with red peppers also next time. But overall, fabulous find in this Garlic-Basil Shrimp recipe.
